The master of this stone hearth was a man of long sinews whose name in the notched cedar-tallies was recorded as The-Mouth-Which-Does-Not-Stumble, though the goatherds who drive their flock through the red shale named him only Giorgi the Great-Throat, Master of the Low-Bench. He was neither a striker with broad axes nor a counter of silver discs; he was the Tamada of the nine villages that hang upon the limestone ribs of the mountain like swarms of wild wasps.

In that era the earth was not tame. Out of the deep crevices where the black water runs beneath the karst, there walked forth the children of the hollow earth, whose bodies were like grey river-mud and whose breath was like the stink of rotten skins forgotten in a wet pit. Chief among these was the three-headed Devi whose name in the foreign tongue has the sound of Black-Hoof-of-the-Ravine. His three heads were not alike: the right head was like the head of a blind mountain-bear that eats winter carrion; the left head was like the head of a horned viper with scales of rusted iron; and the middle head was like the face of a fat, wicked elder who has drowned five brothers in a mash-vat.

Now the middle head of the Devi had a thirst that could not be cooled with the ice of the glacier. When the sun dropped behind the teeth of the rock, the monster would come down upon the villages of the terrace, not to burn the hay-stacks, but to tear the heavy flat stone-lids from the subterranean earthen jars (kvevri) buried in the loam. He would thrust his great shovel-neck into the wine-holes and suck until the skins of the vessels were dry and cracked, leaving the poor men of the vine with only bitter lees and vinegar. And if any shepherd cried out against him, the left head of the beast would spit a venom of blue rot upon his sheep, while the right head crushed his ribs against the boundary stones.

“Behold,” howled the three throats of the monster from the top of the scree, “the earth belongs to the thirst that is greatest! If the masters of the terrace do not bring down to the flat gravel ninety earthen vessels of red must before the feast of the split calf, I will take the red water from the necks of their daughters and stamp their stone houses into small flour!”

The mountain folk gathered upon the flagstones before the hearth of Giorgi. Their hands were shaking like dry hazel-leaves, and their faces were grey like ashes when the grease is spent.

“The nine valleys have not ninety jars,” wept the elders, tearing the sheepskin collars of their cloaks. “The frost of the third moon bit the tender shoots upon the slate. We have only our seed-grain and three small casks of pressed juice. If we give this to the mud-demon, our children will perish in the white winter; and if we keep it, he will pull the roof-trees down upon our beds.”

Then Giorgi rose from his three-legged bench of walnut wood. Across his chest, hanging from a broad baldric of goatskin rubbed with mountain lard, swung a great curved horn taken from the skull of a king-tur whose horns were five cubits wide. The lip of the horn was bound in heavy bronze that had been beaten with small hammers to show running grape-sprigs and four-and-twenty small bowls; its sharp foot was thrust into a bronze ram’s head that held curled horns of beaten copper; and between the eyes of the ram sat an amber-colored carnelian stone that shone like an ember blown upon through a hollow willow-pipe in the dark.

“A guest who knocks at the door with iron,” spake Giorgi, and his voice was like two heavy millstones grinding dry grain, “is not driven away with stones, for the law of the mountain says that the house-master must set the table even if the devil himself sits upon the low stool. We will not take lances of pig-iron, nor will we dig pit-traps in the gravel. We will invite the mountain-eater to the bench of honor; we will fill the cup of the threshold; and we will see whether his belly is deeper than the root of the mountain.”

The people cried out that he had lost his five wits to the madness of the grape-spirit, but Giorgi took only his horn, a single goatskin flask of double-boiled mountain spirits (chacha), and three flat loaves of barley-bread baked with salt. He walked up the ravine alone, where the black mist smells of wet sulfur and dead snakes, until he stood before the cavern of the Devi.

The monster crawled out of the cleft like a great slug, his twelve claws scraping the slate. His three mouths were open, dripping yellow slobber that burned the moss where it fell.

“Little worm of the field,” bellowed the middle head, “have you brought the ninety jars upon your bent back, or do I eat you with wild leeks before the moon climbs the pass?”

Giorgi did not bow his knees, nor did he drop the horn. He pulled the stopper from his goatskin flask and filled the great tur-horn until the clear, fiery liquid reached the carved bronze rim. The carnelian cabochon upon the ram’s forehead immediately flared with a bright, smoky gold light, like the torch of a watch-tower when the enemy crosses the ditch.

“The sons of the vine do not carry jars like pack-mules to a ditch,” said Giorgi, speaking in the formal high language of the nine toasts. “A mountain-man does not deal with a noble dweller of the crags in the manner of a cattle-trader. You have spoken of thirst, and I am the Tamada of the high saddle. The first law of the rock is hospitality: no stranger shall be turned away parched from the gate while the horn has a tongue. If you would have the juice of the nine terraces, you must first sit upon the stone of guest-friendship, raise the cup of the ancestors, and empty this small vessel of horn to the health of the threshold.”

The middle head of the beast laughed with a sound like a landslip into a dry gorge.

“Do you mock the stomach of the mountain with a single goat’s claw?” sneered the monster. “I can drink a river until the river-fish are baked upon dry clay! Give me the bone, little meat-man, and when I have licked it dry, I will crack your shin-bones for the sweet marrow!”

The Devi reached out his broad claw, which was hairy like an old badger’s paw, and seized the horn. He tipped the rim into his middle mouth and swallowed the fire-water in a single gulp.

Now the spirit of the horn was not the weak drink of the plains. As the liquor washed over the monster’s tongue, the carnelian stone pulsed with a heat like a forge-fire. The pine-resin within the horn stirred, and instead of remaining empty, the vessel instantly filled itself to the bronze lip with a dark, heavy, sweet wine that bubbled like boiling pitch.

“Hah!” grunted the Devi, wiping his beard with his forearm. “The taste is small, but the belly feels a strange warmth. It is empty—now give me your throat!”

“The horn is not empty,” said Giorgi, smiling with his seven white teeth. “A true feast-guest does not set down the vessel while the wine-eye sleeps upon the rim. It is the law of the Tamada: to every guest three toasts are owed before the knife is drawn. The first was to the threshold; the second is to the mothers who carried the water-jugs to the vineyard!”

The monster looked into the mouth of the horn and saw the red must swirling like a whirlpool beneath the bronze rim. The pride of the brute was great; he could not endure that a hairless man should say his gullet was narrow. The bear-head upon his right shoulder lunged forward and took the horn, gulping the liquid down its throat with a roar like water plunging into a sinkhole.

Yet no sooner had the right head finished the draught than the vessel filled again, cold and sweet like juice crushed that very morning from wild mountain berries. The carnelian glowed brighter, throwing long orange beams across the black slate walls of the chasm.

“The third toast,” shouted Giorgi, raising his hand toward the northern peaks, “is to the stone bones of the earth that do not break when the great bull stamps his foot!”

The viper-head upon the left shoulder hissed with rage, snapping the horn from the bear-head’s jaw. It drank until the horn made a sucking sound like an empty lung; but the moment its iron teeth left the bronze rim, a fountain of spiced, honeyed must welled up from the beeswax lining, filling the cup until the red drops spilled over the chased bronze friezes onto the stones.

For three watches of the night, while the seven stars of the Plough turned in the northern frost, the great contest continued upon the shale.

The monster drank with his right mouth until the bear-head’s eyes turned red and watery like boiled onions. He drank with his left mouth until the iron viper-scales turned soft and slick like wet leather. He drank with his middle mouth until his belly swelled like the skin of a bull dragged through a mill-pond.

He drank the draught of nine pressed terraces; he drank the strength of forty summer suns; he drank the fiery essence of thirty cauldrons of distilled mash.

Yet the horn never ceased its giving. Whenever a mouth left the bronze collar, the amber stone flared, the ram’s horns hummed with the singing of thirty mountain harps, and the cool red stream rose anew to the rim, sweet, pure, and without end.

By the time the false dawn painted the snow with the color of cold lead, the limbs of the Devi had lost their iron malice. The bear-head was snoring with a wet, bubbling sound, dreaming of honey-trees that do not exist; the snake-head was curled around the neck of the middle head like a limp wool-fringe; and the middle head could neither spit venom nor utter threats. Its eyes were rolling in its brow like white stones in a torrent, and its tongue hung out of its mouth like an old piece of cured ham.

“Man of the little horn,” stammered the middle mouth, while its great belly sloshed from side to side like an ox-cart laden with water-barrels, “your well has no bottom… the mountain has entered my ribs… the world is spinning like a wool-spindle in the fingers of an old wife…”

“The horn has no bottom,” answered Giorgi, stepping forward and taking the cool horn back into his own hand, “because the hospitality of the righteous is wider than the sea, while the greed of the spoiler is a pit that chokes upon its own stone.”

Giorgi raised the horn to his own mouth. Though the monster had touched the rim with three foul jaws, the pine-resin and the burning carnelian had burned away all taint, leaving the draught pure as glacial runoff. Giorgi drank the last cup in honor of the morning star, his eyes clear and his arm steady.

Then, filling his chest with the great breath of the vine, Giorgi took a single swallow of the strong spirit and blew a roaring gust of breath against the breast of the drunken brute. The vapor of the unearthly spirits rolled across the stones like a cloud of autumn pollen.

Giorgi struck a small spark from his pocket-flint upon his iron knife.

The mist ignited with a sound like the cracking of dry roof-beams. A sheet of clear, amber-yellow flame swept over the sleeping beast—not the dirty black fire of charcoal that roasts meat, but the holy solar fire of the grape that burns away only the mud and the filth of the deep cavities.

The three-headed monster did not die in blood; he melted upon the cold slate like a snowman built by children when the warm southern wind breathes through the gorge. His black claws dissolved into grey silt; his three heads melted into streams of thick, yellow river-mud; and his great mountain-belly burst, pouring forth not venom or gore, but a clear, sweet-smelling spring of cold mountain water that washed the shale clean of all slime and rot.

Where the mud-demon had sat, there remained only a clear well of bubbling mineral water, surrounded by nine wild grapevines that sprang out of the cracked rock in the morning sun, their tendrils heavy with small, frost-hardened sweet berries.

Giorgi wiped the bronze ram’s head upon his woolen sleeve and hung the horn upon his hip. He walked down the mountain path to the nine villages, where the bells of bronze were ringing for the dawn, carrying neither wounds upon his skin nor the dullness of strong drink in his head, but singing with a voice that was like the rushing of a high cataract.

And the people of the high terraces laid down their iron spears, and they gathered in the stone press-house, where they drank from the horn that does not fail, learning from that day forward that no evil thing of the chthonic dark can overcome the man who turns his table into a shield and his hospitality into an unyielding wall.

This account was cut into the shoulder-blade of a wild ox by the scribe of the upper tower, which was afterward buried beneath the foundation-stones of the ancient cellar, being preserved in the dark until the diggers of the railway brought it once more to the light of the sun.
